Tete De Moine

Made of raw cow's milk this semi-hard cheese has a dense texture and an intense sweet and tangy flavor that reminds of musty wood and nuts. Unlike most other mountain gourmet cheeses which tend to be very large this cheese is made in small drums and presents a firm and creamy paste with a straw-yellow color that tends to darken as the cheese ages. Tete de Moine is considered one of the stronger sweeter Swiss cheeses and pairs nicely with fresh or dried fruits or hearty dessert wines of equal intensity.
